Wilted Red Cabbage with Mint and Feta

(from Vegetable Literacy, by Deborah Madison)

 

2 Tbsp olive oil

1 medium onion, thinly sliced

1 clove garlic, minced

4 cups thinly sliced red cabbage

salt and pepper

lemon juice

2 tablespoons each chopped mint, dill and parsley

goat feta (optional)

 

Heat oil in skillet and add onion, cooking until soft.

Add the garlic, cabbage, and some salt.

Stir to wilt cabbage without overcooking, 2 minutes or so. Remove from heat, and toss with lemon juice, herbs and black pepper to taste.

Top with crumbled feta and whole mint leaves, if desired.

Rutabaga Ginger Apple Soup

This soup is surprisingly subtle and delicious.

It was inspired by an amazing soup made by 555 in Portland. Try theirs AND make this!

 

One medium leek

Two cloves garlic

1 large carrot

1/2 a medium rutabaga

one apple (I used golden delicious)

1 Tbsp grated or chopped fresh ginger

chicken or veggie stock

1 cup half and half

 

Peel and roughly chop all the veggies.

Saute the leek and garlic in 2 Tbsp butter or olive oil.

Add the rest of the veggies and just cover with stock.

Cook until veggies are soft.

Puree until smooth, adding a bit more water or stock if necessary. Stir in the half and half. Season with salt and pepper. Serve hot or cold.

Spring Roll Salad

Inspired by a Thai take-out favorite, this is a great dish for a weekday dinner or to bring to a potluck. Serves 4-6+

 

mix in large bowl:

2 cups shredded purple or green cabbage

1 large carrot, shredded

1 cup bean sprouts

2 Tbsp fresh chopped mint

2 Tbsp fresh chopped cilantro

juice of ½ a lime or lemon

½ cup chopped peanuts

2 scallions or 1 small red onion, thinly sliced

½ to 1 package rice stick noodles prepared as directed on package and rinsed with cold water.

 

For dressing, shake together in a jar:

1 Tbsp vegetable or peanut oil

4 Tbsp seasoned rice vinegar

3 Tbsp Maple Syrup

dash of hot pepper flakes

Pour dressing over salad and toss with tongs to coat.
