Sugar on Snow 

(“la tire”)

Best with dark syrup

When there is fresh snow, a great treat is made by boiling some of the syrup past syrup stage to just before
sugar stage (232 degrees F) and pouring this thickened syrup over the cold snow.  A thick taffy results, sweet and chewy. 
It is traditional to eat sour pickles and donuts along with this taffy.
This can be frozen in plastic freezer boxes for ice cream topping as well.
