Sautéed Corn with Shallots and Peppers
In a sauté pan, melt the butter on medium heat. Add the shallots and peppers and cook for 5 minutes, stirring occasionally. Add the corn and stir well. Cover and let cook a few minutes. Check and stir frequently until corn is fully cooked. Season to taste with salt and pepper.
