Roasted Cauliflower

This might be my favorite simple vegetable dish of the year. The cauliflower becomes sweet and creamy I recommend mixing colors of cauliflower or mixing in broccoli, but be careful because broccoli cooks a bit faster.

Preheat oven to 400. Chop up some cauliflower into florets. Toss with olive oil and salt and pepper and spread on cookie sheet (one layer only). Roast 10 minutes. Stir and finish roasting until the cauliflower is crispy on edges and tender.
