This is now a family favorite. I love the way the roasting concentrates the beets’ sweetness.
Preheat oven to 400. Wash and chop some beets into ¾ inch chunks (I don’t bother to peel them, but you could after they’re cooked if you want.). Toss with olive oil and salt and pepper. Spread them on a cookie sheet (one layer deep only). Roast for 15 minutes then stir and continue roasting until tender (about 35-40 minutes). You can also mix in chunks of carrots and potatoes for a nice mix of roasted vegetables.
