Mixed Mash

Yum: This simple side dish is rockin'! It far surpasses the sum of its parts.

 

Peel, chunk, boil, and mash 1 medium parsnip, 1 medium celeriac root, and 1/2 a medium rutabaga.

Add 2-4 Tbsp. butter and generous salt and pepper. Mash to desired texture. 

Enjoy! Leftovers are good cold or re-fried with chopped onion like hash (mixed mash hash!).
