Mashed Summer Squash

 

This super side dish often outshines the entree. It is a favorite of ours, and its greatness lies in its simplicity so it's good to let the squash be the focus.

 

Ingredients:

2-3 medium yellow summer squashes, chopped into 1/2 inch cubes or so.

butter

salt and pepper

 

Method:

steam or boil the squash until tender. Drain water. Add some butter, maybe 2-3 tablespoons. Sort of mash/chop up whole dish, so the butter is melted and evenly distributed. Appearance will be chunky and rustic. Season with salt and pepper.
