These are the beans we serve at Maine Maple Weekend.
2 pounds of beans
¾ cup maple syrup
2 teaspoons dry mustard
½ teaspoon pepper
Salt to taste
1 or 2 onions chopped
Parboil the beans until their skins break open when you blow on them.
Put the rest of the ingredients in the pot. Add the beans, keeping enough of the parboiling water to just cover the beans.
Bake at 300 degrees F or so for around six hours, checking periodically to add water to keep the beans covered.
Bean baking is imprecise, which is why it is suited to baking in the wood ovens.
