Grilled Potatoes in a Packet
This is a delicious and quick approach to a potato side dish. Enjoy!
Preheat your grill. Wash and slice 2 lbs of potatoes into quarter inch medallions. Thinly slice one medium onion. Spread out a large piece of aluminum foil on your work surface. Pour out 2 tbsp vegetable oil onto foil. Lay out medallions in oil, spreading them as much as possible, preferably no more than three deep. Layer in the onion. Add salt and pepper. Sprinkle on 1 tbsp of water. Tear off another large sheet of aluminum foil and spread it with 1 tbsp of butter. Put that sheet on (butter side down), and crimp the edges of the foil well all around, so you have a tidy flat package. Poke a couple small holes in the top of the foil. Place it on the grill and close the lid. Turn the heat back to medium. Carefully flip the package after about 15 minutes or so. Peek in (watch out for steam!) after another 10 or so minutes to test for doneness. Serves 4.
