Here is a simple salad that celebrates the coolest fruit of the summer. It is based on a Japanese presentation of cukes.
Feel free to tweak it in any direction that suits you—scallions or cilantro are nice additions.
Ingredients:
Some cucumbers
1/3 cup of white vinegar
4 teaspoons sugar
teaspoon salt
2 slices fresh ginger root, finely chopped or slivered
Method: Cut the cucumbers in half lengthwise and remove seeds if they are large. Peel if you like.
Slice crosswise into very thin slices. Marinate in a mixture of the other ingredients. Chill in the marinade for an hour or longer. Serve chilled.
