Shredded Carrot Salad

This is one of Ramona’s favorites.

Peel and grate 2 or 3 large carrots by hand or in food processor. Pour ½ cup of cider over carrots and toss. Add ½ cup raisons if desired. Chill 1 hour to allow raisons to plump. Serve as a side dish—what a nice alternative or addition to green salad or cole slaw.
