Here is a great salad with a different approach coming by way of Rita Anderson and Lynn Wardwell Anderson.
Combine in a heavy sauce pan: a ½ cup melted butter, 2 Tablespoons of sugar, 1/2 cup slivered almonds, 1/2 cup sesame seeds,
and 2-3 oz. Noodles (like Ramen), crunched up and separated from the flavor packet, which you can save for soup later.
Cook this mixture over low heat, stirring very often so it won’t burn on. Set it aside to cool just as it turns golden brown.
Chop up two heads of broccoli in very fine pieces. About an hour before serving, stir in this dressing
with the broccoli: ¾ cup olive oil, ¼ cup red wine vinegar, ½ cup sugar, and 2 Tablespoons soy sauce.
Just before serving, stir in the noodle mixture.
