Zesty Arugula Salad
Try this easy salad to dress up dinner or wow some guests:
2 bunches arugula (would serve 4 people or so)
1/2 cup toasted walnuts (toast at 350 degrees 15-20 mins)
some shaved Parmesan cheese
A sweet and sour dressing (for example shake together: 1/2 c apple cider vinegar, 1/3 cup apple cider, 1 T vegetable oil, 1 T maple syrup)
Wash and dry the arugula. Tear into bite sized pieces and remove largest parts of ribs. (They're not tough, they're just spicier.) Place in medium salad bowl. Toss with some of the dressing. Add nuts and shave on some Parm. Yum!
