Apple Coffee Cake

Carolyn’s adaptation of a recipe from The Market Basket Cookbook

1/3 cup butter
1 cup sugar
1 egg, beaten
1 tsp. vanilla
2 cups flour
3 tsp. baking powder
½ cup cider or orange juice
½ cup milk
6 apples, peeled, cored, and sliced
1 tsp. cinnamon
¼ cup sugar

Preheat oven to 350 degrees. Cream butter, add sugar, and mix well. Stir in egg and vanilla. \
In a separate bowl, combine flour and baking powder, add this mixture to the creamed mixture, alternating with cider and milk.
Place ½ the batter in a lightly greased 8 or 9” square pan Press half the apples into the batter.
Sprinkle with half the cinnamon and sugar. Pour the remaining batter on top of that, then press remaining apple slices
and sprinkle with cinnamon and sugar. Bake 35 to 40 Minutes. Makes 6 to 8 servings.
